This looked easy and yummy. In my opinion, anything with chocolate and coconut has to be a winner. Irish cream? Ditto. Or use vanilla.

I probably had this for the first time about 50 years ago. I used to look at people who said that in wonder. And here I am. I really am that old. Anyway, use a blender or food processor to crumb the vanilla wafers and chop the pecans.

Vanilla Wafer Cake

Nancy Carnahan

2 sticks butter                                 ½ cup milk

1 ½ cup sugar                                 1 TBS vanilla

1 (12-oz) box vanilla wafers            2 pkgs. Coconut

4 eggs                                               2 cups chopped pecans

Preheat oven to 325. Spray or grease pan. Cream butter and sugar, add 1 egg at a time. Add crushed wafers, alternating with milk. Add pecans and coconut. Bake in tube or Bundt pan for 1½ hours. Remove and cool on wire rack.

This is an old Southern recipe and is rich, dense and yummy. It’s also good baked and small loaf pans and given as gifts.

  1. I think she must be speaking about the her being “old” comment.. or am I missing something.. or is the “used” supposed to be “use” ..
